Acorn-Fed 100% Iberian Loin "Pata Negra" half piece (550gr)
Lumbar muscle from own selected 100% Iberian pigs. They spend the first stage of their life on the farm, feeding on natural cereals produced in our installations, up to a weight of between 40 and 50kg, when they access to the pastures. There they enjoy an exquisite diet composed by the mentioned selection of cereals, grasses, tubers, roots and acorns, reaching 90/100kg at the beginning of October, when it starts the “montanera”, the moment when the acorns fall and constitute their only feed up to an approximate weight of 180kg in their adulthood.
When cut, it has a marble-like appearance with streaks of infiltrated fat, with soft golden tones and a red colour that invites to be tasted.
At the end of the curing process, it passes through a chamber where holm oak charcoal burns very slowly, giving it a persistent, enveloping and unmistakable bouquet.
Its taste is the union of the presence of paprika, with a soft touch of garlic, combined with spicy nuances and smoke providing a long and pleasant aftertaste.
