100% Chardonnay.
Tulum Valley, San Juan (650 MASL) . Eight-year-old vineyard. Drip irrigation with water arising from the Andes melting glaciers. Vertical trellis.
Sandy loam soil and bedrock, with very low levels of organic matter.
Manual harvesting.
Destemming and grape chilling.
Managed cold maceration.
Pneumatic pressing and draining.
Cold settling and Racking.
Controlled fermentation with indigenous yeasts in stainless steel tanks for 20 days.
Ageing of 30 % of the wine in new American oak barrels for 3 months. Blending and stabilization.
Filtration and bottling.
Bright green hues in a yellow colored wine. Fruity and fresh wine. In nose, offers pineapple and banana aromas. Balanced acidity and smooth finish.
Great partner of white meat, fish and seafood. Can also be enjoyed with salads, soft cheese and fruit desserts.
Best served between 8° C. - 10°C.
