AOP Languedoc Château Fouzilhon Reserve
Built on top of a rocky peak from the IXth century, the Fouzilhon castle and its village were a real stronghold during the Middle Ages. The vines are planted in the clay and limestone soils on the hills around what is now the village of Fouzilhon. The Carignan variety is vinified through carbonic maceration with whole grapes in order to fully enhance the fruity potential. As for Grenache and Syrah, they are destemmed and then vinified the traditional way between 25 and 30°C. By this way grapes preserve their authenticity and reveal the full potential of the fruit. Blend : 30% Syrah, 30% Grenache, 40% Carignan
