The 73 species of coffee proved, only two are cultivated intensively to provide almost all of the world's production: canephora and Coffea arabica. Naturalized in all tropical areas, each gave birth to several hundred varietie.
Cultivated in tropical areas between 600 and 2200 m altitude, the species Coffea arabica accounts for about 70% of world production of coffee. Probably originating from Ethiopia, these are coffee shrubs 3 to 5m in height (about 10m in the wild!) With dark green leaves.
Each shrub produces two to three times per year coffee cherries or after each flowering. Enable the development of cafes with remarkable aromatic qualities , Arabica has about 200 varieties spread highlands of Ethiopia to those of Jamaica through Latin America and Asia.
As the fruit of the vine, that the coffee has indeed organoleptic characteristics depending on the soil that nourishes, sunlight or altitude . With approximately 800 complex aromas , Arabica are sometimes grown as large vineyards, revealing some exceptional wines.
Among these remarkable varieties, the most famous are the sharp Bourbon of Reunion, Blue Mountain Jamaica, Mocha Ethiopia, maragogype Mexico or the Sul de Minas Brazil.
