Elaboration:
Grapes from over 40 year old vines are hand-picked. After crushing and de-stemming, the grape macerates for 2-3 days at a temperature of 5-8ºC. Fermentation takes place afterwards at controlled temperature (23º-25ºC) in stainless steel tanks with several rackings per day. After the initial fermentation a portion of the wine is drawn off and left in barrels so that it can undergo malolactic fermentation on its lees. 18 months ageing in French and American (80% and 20%) oak barrels.
Tasting:
Colour:Red clean garnet with a ruby rim.
Nose: Balsamic notes with aromas of cedar, spice box, incense, blueberry, violets, and black cherry.
Palate: Powerful, dense with a good structure, medium to full body with earthy tannins mostly resolved. Predominance flavors of chocolate and a heady finish.
Recommended with: Roasted meats, wild game and mature cheeses.
