Time for a real cheese veteran! Since time immemorial, our Allgäu mountain cheese has been cheesed in the valley all year round and nothing has changed to this day, because in our Hopfen village dairy we still produce with old crafts and daily fresh Allgäu hay milk. A good reason to honor this beautiful tradition with a very special cheese. Our bedrock alpcheese is made according to the original recipe of the first Allgäu mountain cheese. The hard cheese made from raw milk is allowed to mature for a full 16 months, and not just anywhere, but on a bed of real spruce wood in the maturing cellar. This is exactly where we let our alpine cheese rest until the end of the maturing period, just like in the past. This creates the typically spicy aroma of extra-long matured cheese, which still tastes pleasantly creamy on the palate.
