We globally harvest by hand because of the steepness because of the steepness of the vineyard . All controls are manual without the use of herbicides and organic fertilizers . The soil , which has been compacted for years , is cultivated by horse - drawn ploughs . During the harvest , the grapes are picked by hand and placed in small crates . The vinification begins with the crushing by feet in the traditional "lagares" of the Douro to extract the aromas, tannins and colour of the grapes . Then the juices of the different varieties are blended and fermented in barrels or vats at a low temperature of 16 ° to protect the fruity character of the wines .
