2018 Bittersweet Symphony Cabernet Sauvignon

The intensity of Clare Valley Cabernet shows in this powerfully elegant wine.  The 2018 Bittersweet Symphony is a varietal Cabernet Sauvignon, balanced and structured with rich, juicy fruit balancing grippy Cab tannins.  Almost 18 months maturation in mostly old French oak has also allowed the wine to integrate and soften.  Time in bottle will reward – as we say, the last sip is always bittersweet!
