Bottega Classico is a Metodo Classico sparkling wine, the Italian equivalent of the French Méthode Champenoise. Considered one of the most important systems for the production of elegant, complex and fine sparkling wines, it consists in favoring the second fermentation of wine inside the bottle, a process called 're-fermentation in bottle'.
CHARACTERISTICS
The grapes are hand-picked. The white wine vinification occurs by immediately separation of the skins from the must using soft pressing. The first fermentation occurs at a controlled temperature at 14-16° C for approximately 20 days. The obtained base wine is bottled and receives an addition of sugar and yeasts, to undergo the second fermentation according to the 'Metodo Classico' (Classic Method). During the ageing on the lees (which lasts for 16-18 months), the yeasts in autolysis release the substances that enrich the bouquet and the body of the wine. After the maturation, the bottles are placed neck down on «pupitres» to perform the daily «remuage» (riddling), which consist in gradually turning and inverting the bottles to favor the deposit of the lees in the neck of the bottle. The next step is the «disgorgement».The neck of the bottle is placed in a solution of freezing brine, which freezes the lees into a sort of hard pellet. Once the bottle is opened, the pressure from the bubbles in the bottle push out the pellet of frozen sediment, after which the dosage is added and the wine is re-corked and packaged for sale.
