Buffalo Mozzarella of Campania is a dairy product created exclusively from fresh whole milk obtained from Italian Mediterranean buffalo. Milk with a minimum fat content, as established by regulations, must be delivered to the cheese-factory for processing within 16 hours of milking.
Mozzarella is sold in various forms: round, bite-size, braids, pearl-size, cherry-size, knots and egg-size, weighing from 20 to 800 g. Its smooth, 1-millimetre thick outer layer is porcelain white in colour and the thin inner layers are elastic within the first 10 hours after packaging, and then become softer and free of holes. When cut it releases a mild, white, fatty liquid and the scent of milk enzymes. Its flavour is distinctive and delicate.
