Burrata
Burrata is a fresh cheese made of spun paste produced in Puglia, in Gioia del Colle.
Although it recalls mozzarella, its texture is much more soft and stringy. It is made with cow's milk and has the shape of a cloud, white, smooth and soft, burrata has quickly become popular throughout Italy and then in the world, as one of the tastiest and recognizable typical products of the rich culinary tradition of Puglia.
