Cockle is a unisexual, bivalve mollusc. Egg-laying, although presenting a very wide cycle, has its peaks in May and June, the shellfishing campaign starting in September.
They feed by filtering the water coming into the paleal cavity through the siphons. Their main predators are the common crab, the starfish and some bottom fish.
We must highlight the great quality of Galician cockles, as the Galician estuaries are an exceptional habitat for this mollusc, giving place to big specimens -they can reach 3-4 cm in one or two years- of unsurpassable quality.
Holland also produces a lot of cockles, although smaller than the ones from our estuaries. Given its excellent quality, they are commercialised in different European countries.
