Caciocavallo is an aged stretched curd cheese typically found in southern Italy in a round from resembling a “sack” and is produced from particularly high fat milk from Podolica cows with the sole addition of rennet, milk enzymes and salt.Typical in all the regions that made up the Kingdom of Two Sicilies, it was so famous that it even inspired popular sayings such as "far la fine del caciocavallo" (“to end up like a caciocavallo”), which comes from its shape whose top is strangled by a cord.
