TECHNICAL DETAILS
Clarified juice fermented using inoculated yeast cultures in temperature control stainless steel vessels. At 4 Baume , 70% of the volume was transferred to 500 litre French and Hungarian barrels to complete fermentation and aging on yeast lees until blending and bottling. The remaining 30% completed fermentation in stainless steel vessels. Malo-lactic fermentation was induced in 50% of the barrels and all the stainless steel portion of the wine.
