TECHNICAL DETAILS
One component of juice was cold settled and another component ‘floated’ for juice clarification before fermentation. 60% Fermented in 500 litre barrels and kept on yeast lees until blending, with 40% fermented in stainless steel vessels and inoculated with a mix culture yeast. The oak used included French and Hungarian oak, 50% new ,30% 1 year and 20% 2 year and older. Matured for 6 months before blending and bottling.
