Cheese cylinder

The youngest of our cheeses has a minimum of 21% sheep’s milk, even though it is a semi-soft cheese. This cheese has two types of presentation: with either a yellow or black waxed coating. It has a mild taste, being a semi-soft cheese, but without loosing the intensity provided by the high percentage of sheep’s milk in the blend.
