Chemin des Lions - Chardonnay 2025
Signature grape varieties from Languedoc.
The Gulf of Lion stretches across southern France, between Spain and Provence, opening the vineyards wide to the Mediterranean. Maritime winds—tramontane and mistral—regulate temperatures, keep vines healthy, and promote balanced ripening. Combined with garrigue soils and strong sunlight, this maritime influence shapes terroirs that produce wines both expressive, fresh, and structured, with a clear Mediterranean identity.
Night harvesting followed by destemming and pre-cooling (5–6°C). Gentle pneumatic pressing (closed cycle), cold settling at 5–6°C. Alcoholic fermentation at controlled temperature (17°C), with 50% barrel fermentation.
Bright, luminous golden colour. Intense, expressive nose with subtle vanilla and toasted notes from controlled oak ageing. The palate is clean and precise on entry, developing into a full-bodied, rich and rounded mid-palate with good weight and persistence.
