The Alwelis / Routhier Group led the way as the first company to distribute Christis Halloumi on the German market. That was back in 1990. The manufacturer Christis now operates under the name Charalambides and is one of the largest producers of halloumi cheese on Cyprus. Halloumi cheese for grilling or frying is a centuries-old specialty cheese from the island of Cyprus. Usually made of a mixture of cow's, goat's and sheep's milk, it is the only cheese that can be prepared over a charcoal or table-top grill without melting. Also pan-fried, heated in a baine marie, or cut into small cubes for salads, halloumi is used in many Mediterranean recipes.
