Grapes from very old strains of the Parellada variety. Strains of more than 60 years, located in our estate of Baltana Vella, 480m high. These strains planted in small coastal slopes and with a fairly extreme organic cultivation, produce grapes with a high concentration of aromas and with a high alcohol content to be Parellada. For several years, the farm has not opened, thus avoiding an excess of production and a balance of the strain, together with a short pruning and a good pruning in green, we make the grapes reach perfect ripening points.
Grape harvested by hand, in small trailers it is transported at a distance of 2km to the cellar. We put it in the closed pneumatic press and press at low pressure. Temperature controlled fermentation with selected yeasts. Aging of 2 months in fine lees in stainless.
From this vineyard, where we also produce Parellada, we have used a part to make a sparkling Clàssic Penedès, something to pay tribute to the star variety of Font-Rubí.
Tasting Note
Pale white gold color, greenish and grayish tones, which mark the elaboration that has been done with the minimum intervention of oxygen in the cellar, along with a very elegant fine bubble.
Leave that aging aroma with a mixture of dry grass aromas of low forest, with an aniseed point
Highlights the fine bubble, its smooth passage through the mouth, with a refreshing acidity that invites to continue savoring this sparkling.
