"GOLIARDO is a cooked goose product from the Lombardia region made with the goose skin stuffed with its fresh goose meat and a little skin. All the goose meat is minced and the other ingredients are then added (flavorings, spices and salt).
We use the goose skin case as a tradition to obtain the characteristic shape. Look at the new cooked goose salami's video.
Then it is cooked in hot water for about 3 hours. At the end of the cooking process, it is packed under vacuum, with skin film to manage very low residual oxygen, and refrigerated to reach the right moisture balance and keep its intense taste.
To ensure the best quality of the product to the end of its shelf life, after the packaging the product is submitted to a superficial flash pasteurization for about a minute.
Goliardo should be eaten as an appetizer, for preparing first course as risotto, on pizza and on focaccia.
