The traditional process for making corn flakes is milling. This method is somewhat more expensive, but much gentler.
The corn kernels are cut and then boiled with corn syrup and sea salt. In this procedure the starch is solubilised, i.e. made digestible for us. The starch structure of the corn kernels remains intact in this process and our body breaks down the milled flakes more slowly. As such, they keep you satisfied longer. After the cooking process is complete, the corn flakes are gently roasted so that they remain crunchy
