Fine quality culatello is made using the very best pork and takes a whole year to reach our tables. In order to enjoy the product at its best, we recommend washing it in water, removing all the skin and leaving it to soak in dry white wine for one or two days. After this treatment, the culatello can be kept in the refrigerator wrapped in a cloth that has been soaked in dry white wine and protected by a plastic bag to withhold the moisture and prevent the product from drying out.
