Domaine de Cibadiès - Chardonnay
Domaine de Cibadiès overlooks the Canal du Midi valley, UNESCO world heritage site. Old Roman then Cathar territory, Laurent Bonfils family has settled on the heights of this hill, surrounded by pine groves in 1979. The 92 ha of east / west facing vineyards located on hillsides and terraces, is an ideal terroir for Chardonnay and Pinot Noir. Cibadies hill, true natural wall, delimits the vineyard to the south and forms the famous storm barrier. Winds and rains alternating with a blazing sun constitutes its meso-climate and allows the grapes to reach optimum maturity. Thanks to yield control (not more than 50Hl/hectare) the estate produces wines of great quality. The Chardonnay grapes are harvested extra ripe to undergo skin maceration from 6 to 12 hours before being pneumatically pressed. All oxidation is prevented during the winemaking process. Temperature is set around 16°C.
