Only the Cinsault rosés come from direct pressure. After sludge has been removed the juices ferment under thermal control between 14° and 16° during the whole harvest period that is to say for 5-6 weeks.
The limited use of inputs and preservatives as requested by the Demeter rules make it a delicate, fruity, soft and natural wine whose amount of SO2 ( E22) remains below 40 mg per liter.
