Domaines Bonfils - Le Temps
Through Le Temps and l’Espace, Jean-Michel Bonfils gives us a personal and free interpretation of the Languedoc lands, with the sky of the South of France as the only reference point. Each of these two cuvées is a wine freed from traditional constraints linked to vintages or borders, in harmony with a nature in constant renewal. Le Temps, marked with the letter alpha: α, begins its history in 2021. Resolutely earthy, this cuvée comes from terroirs in the foothills of the Montagne Noire and the Pyrenees. It includes the pebbles of Château Vaugelas in Corbières and the unique terroir of pink marble and schist of Château Villerambert in the northern Minervois. Le Temps α brings together 4 iconic Languedoc grape varieties selected from the 2018, 2019 and 2020 vintages to create a powerful and spicy cuvée. Each of the selected vintages has in common long macerations of 4 weeks that can go up to 6 weeks. The lees are put back in suspension during the maceration.
