Traditional Aubergine dip with Roasted Red Pepper

Sliced pieces of smoked eggplants along with the famous roasted red pepper from Florina (Northern Greece) are the key ingredients of a very delicious snack. It is a Lenten product that contains NO mayonnaise. 

In contrary, it contains the best oil that Greece produces, which is no other than Extra Virgin Olive oil. That adds up to the high nutritious value of the eggplant.
