Fresh Atlantic Salmon Fillet, Trim C, with skin

We produce fillets from fresh Atlantic Salmon. The salmon is already gutted when arriving at the processing plant, so we start with removing the head. Then the salmon goes through a filleting machine where the two fillets are cut from the backbone. Next step is trimming, which is first done by a robot, and then further trimmed manually. Then the pin bones are removed by a machine, followed by manual control. The ready fillets can then be packed as it is, or it can be vacuum packed before being shipped out to the customer.
