We produce portions from fresh Atlantic Salmon. The salmon is already gutted when arriving at the processing plant, so we start with removing the head. Then the salmon goes through a filleting machine where the two fillets are cut from the backbone. Next step is trimming, which is first done by a robot, and then further trimmed manually. Then the pin bones are removed by a machine, followed by manual control. The next stop is removing the skin which is done by machine. The ready fillets are then sent through our portioning machine where the fillet is scanned and optimal cutting is done according to customer specification. The portions can be packed as they are, or they can be vacuum packed before being shipped out to the customer.
