Nearly all types of fresh fillets are cut by hand within our own company. Here, specific wishes of customers can be taken into account as well. The advantage of manual filleting is that a good, thick fillet is created and the fish is cut sharply onto the bones. An added advantage of this technique is that each fish also gets a physical inspection by the respective filleter. The round fish or flatfish is bought at the various auctions. When it is a Dutch auction, the fish is filleted and ready for shipping within 2-4 hours. Foreign types usually require 24 hours.
