Vecchio Varzi® “Guanciale Pepato”, made from heavy Italian pigs, is carefully selected and is characterized by a streaking of lean meat. After being placed in salt for a few days is then covered with aromatic pepper and seasoned for over a month. Before being sold the “guanciale” is
carefully brushed to remove the pepper in excess so that it becomes sweet and enjoyable.
