Why apply the Hpp technique to the pasta sauce?
Aromatic herbs, cheeses and some vegetables offer their best aroma when not cooked.
In this context, we have decided to develop a line of products that can be used as pasta sauces or seasonings/toppings, based on the use of high pressure. We started with basil pesto, the most important sauce and we took it as a model to develop other sauces.
Compared to the sauces present today in the fresh counter, our pesto contains just a little bit of salt and acidifiers, ingredients that are otherwise essential for preservation in the absence of high-pressure technology.
