A Marbled Cheese Obtained By Adding Selected Moulds (Penicillium) To The Curds Whose Proliferation Is Promoted By The Piercing Of The Rind During Aging. Covered By a Slightly Humid Rind, It Offers a Creamy Paste Marked By Blue-Grey-Green Streaks After About Two-Three Months Of Aging. It Releases a Special Unique Bouquet To The Nose, With The Taste Of The Marbling And The Flavour Of Sheep Milk In Perfect Harmony. In The Mouth It Offers a Refined But At The Same Time Pronounced Taste.
