Joseph Castan Châteauneuf du Pape
The soils, full of cobbles, are mainly composed of big sandstone quartz and red sandy clay. Châteauneuf du Pape is produced in a very specific climate, the driest in the Hills of the Rhône area. The heat stored in the stones during the day is released at night, thus helping the maturation of the grapes. The latter are harvested in the early hours of the morning, and then destemmed. When place into the vats, the temperature is maintained at a steady 7°C in order to perform pre-fermentation cold maceration and extract intense colours and primary aromas. The wine stays there for 4 weeks, and the vats are checked every day. Then, the wine is placed on yeast lees to age in thermo-controlled vats during ten months.
Blend : 70% Grenache, 15% Syrah, 15% Mourvèdre
This is beautiful, deep dark red wine with cerise reflections. Its intense nose expresses soft fruit and small-berry aromas, spices, menthol and balsamic hints, such as resin, all at the same time. A strong-bodied, fresh attack on the palate gives way to a generous, sweet-coated sensation. The final persistence reveals once again the spicy and balsamic flavours.
