Joseph Castan Elegance Cabernet Sauvignon
Argillaceous-limestone soils and limestone marls on the first foothills of the Cévennes area. Different plots are delimited on the vineyard in order to sort the best grapes.The grapes are converted into wine though a traditional method with two-week maceration. Extraction is performed gently throughout the fermentation process, which occurs under 28°C, so that smoothness and varietal aromas are fully expressed in the wine. This is a beautiful crimson wine with deep violet reflections.
Its smell is complex, full and smart, offering small-berry flavours to the nose – as if they were slightly cooked – and an outstanding smell of pepper and cinnamon. One can also sense some chocolate hints. A plain, round attack on the palate gives way to a strong-bodied, ripe tannins taste experience. Its dense final persistence, slightly mentholated, eventually reveals spices' and chocolate flavours
