Joseph Castan Elegance Merlot
Argillaceous-limestone soils and limestone marls on the first foothills of the Cévennes area. Different plots are delimited on the vineyard in order to sort the best grapes. The grapes are converted into wine though a traditional method with two-week maceration. Extraction is performed gently throughout the fermentation process, which occurs under 28°C, so that smoothness and varietal aromas are fully expressed in the wine. This is an intense dark red wine, with magnificent shiny reflections. The nose reveals peppermint as well as ripe berry scents. After a fresh, velvet attack on the palate, one can feel the roundness of Elégance Merlot thanks to its perfectly melted tannins.
