The Drautaler has been produced for decades by Kärntnermilch and is one of the most popular cheeses in Austria. To give the cheese a more intense taste experience for the connoisseur and still retain the characteristics of this cheese, it has been further developed with the help of ripening by means of red cultures. Through the maturation in loaf form and the intensive care of the surface with red cultures a mildly aromatic, nutty flavor is achieved.
