SMOOTH AND BALSAMICKapriol Old Tom has a fresh, balsamic bouquet of forest mountains, reminiscent of juniper and mint with a noteof pine and bay leaves. The aroma is smooth and enduring whilst the herbs are balanced by the hops’ bitterness.KOTG has got a very little percentage of sugar, thus creating a delicate aromatic flavour. The absence of citrusfruits makes it easy to mix. In our opinion it goes well with lime and grapefruit, and results in very refreshingcocktails such as the Tom Collins. 

DISTILLATIONJuniper berries are infused at room temperature for fifteen days before the first distillation begins, in two 100 litrecopper stills from the Second World War. The same procedure is applied to the other herbs, except for the hops,bay leaves and oregano, which are distilled by a cold process which also extracts the colour pigments, followinga gentle filtration that maintains the natural flavours.
