Coarse soil with very low water holding capacity. Mild climate, and a 20°C. temperature range

Fermentation with selected yeasts.
Overpump and maceration for over 25 days.

Ageing in French and American oak for 8 months.
Blending and filtration.
Bottling.
The desert climate produces a soft, full bodied wine with ripe red berry and plum flavors. Complex aromas with hints of mint and spices. Great balance between fruit and oak.
Ideal partner to roasted meats such as pork, duck or rabbit. Also great with ripe cheese.
Best served between 16° and 18°C. Open an hour before serving to fully appreciate its qualities
