This is a small Tomme cheese from sheep with a paste that remains soft crust and a consumable ammene a peculiar taste of undergrowth. The ivory color of the paste is very characteristic of this cheese. It is rubbed with caramel and brine during the ripening which gives these beautiful autumn color.
