Manchego: The most famous of Spanish cheeses, made with pasteurised milk from the Manchega sheep in central Spain. 3M, 6M, 9M or 12M matured possible, dependent upon the intensity of taste required.
Fabulous as tapas, as a tasty snack, and delicious paired with Spainsh Membrillo (quince paste).
A non PDO similar sheeps cheese at a lower price-point is also available.
