The Meule de Savoie produced by the Cooperative de Yenne is a cooked, pressed paste cheese made from full cream milk. It comes in the form of rounds 50 cm in diameter and around 15 cm in height. Each round weighs between 35 and 45 kg.
The rind is golden, the colour of straw. After a minimum ripening period of 5 to 6 months, a very fine and melting paste is obtained, producing a cheese with a fruity taste. It is an ingredient in the traditional recipe for fondue savoyarde and can be served as an aperitif or added to salads.
