In late spring, early summer, the Manuka tree is coveredin m asses of flowers. Bees visit these flowers to collect nectar and produce New Zealand’s most famous honey. Manuka honey is a very smooth, dark and intense honey with caramel and toffee flavours. Manuka is available in a number of grades. The higher the grade of Manuka the scarcer the supply.
