2. Mozzarella Di Bufala - Mozzarella di Bufala is a fresh, drawn-curd cheese, made directly from whole cow-buffalo's milk carefully selected to ensure freshness and wholesomeness. The taste of true Mozzarella di Bufala is pleasantly sourish with a faint mossy smell. The mozzarella is porcelain white in colour, spherical and a very thin glossy rind. When cut across, a whitish whey smelling of milk ferments oozes out, and the texture is stringy.
