Drip irrigation with water arising from the Andes melting glaciers. Vertical trellis.
CAB-SAUVIGNON: Pedernal Valley: 1350 MASL. Coarse soil with very low water holding capacity.
CAB-FRANC: Tulum Valley: 650 MASL. Sandy loam soil and bedrock, with very low levels of organic matter.
Manual Harvesting.
Bunch selection and destemming.
Blending and fermentation with selected yeasts.
Rotative fermenter and pneumatic pressing.
Natural malolactic fermentation.
Auto-clarifying racking.
Ageing of the wine in American and French new oak barrels for 15 months.
Bottling and bottle ageing for 8 months at controlled temperature.
Deep red color. Aromas of green pepper, ripe red fruits and blackberries. Hints of dark chocolate and well integrated oak. The finish is persistent with fine tannins and silky texture.
This wine matches perfectly with grilled game meat.
Best served between 16° and 18°C. Open an hour before serving to fully appreciate its qualities.
