Fermentation on the skins takes place for 15-20 days at a controlled temperature of 26° - 28° C. Malolactic fermentation in stainless steel until spring.
Dark ruby red with garnet tones from ageing. On the nose, hints of green pepper, blueberry, blackberry and prune. Full and velvety with ample depth and delicate tannins.
Perfect with game, grilled and braised meat. Delicious with cold cuts and aged cheese.
