Pure Vision Organic Cabernet Sauvignon
Vineyard The grapes used for this wine was grown on our certified organic vineyard with 26 year old vines. Cover crops such as barley, oats, wheat and broad beans are used on this vineyard as mulch to suppress weeds during the winter. The healthy soil has been maintained without the use of synthetic chemicals, fertilisers or pesticides, a process which releases the natural fruity flavours in the grapes resulting in beautiful wine.
Winemaking We experienced cooler than average spring nights and below average rainfall for the 20113/19 growing season. Well-managed irrigation systems helped replenish the soil moisture and prepared the vines for the warm and relatively hot summer ahead, right into harvest. Our Cabernet Sauvignon grapes were harvested early March, in the early hours of the morning. The grapes were transported to the winery to be crushed and destemmed to an open top fermenter. The must was inoculated and allowed to ferment between 25-30 degrees celcius until dry. The cap was pumped over and splashed twice daily allowing plenty of air into the ferment for a minimum of 7 days. Once primary ferment was completed, the must was bag pressed and racked to older French oak until completion of malo. Upon completion, our wine was racked and the acid was adjusted. Our wines are bottled within 12 months to ensure the style retains vibrant primary fruit freshness.
Tasting Notes This delightful wine shows red currant, spice and French oak aromas. It has a medium bodied palate of blackberry fruit and hints of Cabernet leafiness. Aged in French oak for 9 months, this wine displays soft, well integrated tannins, with a smooth, velvety finish.
