Quinoa
Widely consumed in the Andes region, quinoa is considered a pseudo cereal because it contains part of the nutrients in some of the conventional cereals (rice, wheat, oats, rye, etc.), excluding gluten, but with different planting and growth characteristics.
Considered a food of high biological value, due to its profile in proteins and essential amino acids and one of the most complete foods in human food.
