Fresh Ricotta is made from milk whey obtained from the curdling process that is heated to 70-80° and therefore “ri-cotto” (meaning, cooked again).
Ricotta Fresca Ovina from the Riserva Esclusiva Auricchio line is a “Roman” ricotta that differs from other types because it has a more compact, dry texture, and it also contains less fat. It should be eaten soon after production. Riserva Esclusiva Auricchio also has a “Mista” variety that is made from a blend of cow’s and sheep’s milk. It is an excellent table cheese, but it is also the perfect ingredient for both savory and sweet recipes.
