Arista di filiera alla salvia e vernaccia di San Gimignano
The most refined pork cut is seasoned with fresh sage leaves from Valdelsa hills with the renowned "DOCG Vernaccia di San Gimignano" , an antique and celebrated white wine, also mentioned by Dante in te XII century in his poem "Divina Commedia".
The pork loins, coming from selected animals, are manually trimmed, cleaned and then marinated for 48 hours in a delicate brine with honey, spices and the best "DOCG Vernaccia di San Gimignano".
Scattered with fresh sage leaves, the loins are put in to the oven, where they will stay for approximately 10 hours, up to a perfect gilding.
