Esselusso Mortadella PGI

From the ancient Veroni experience, the real mortadella from Emilia Romagna. 

- Colour: pink for the lean part (made from the pig's shoulder) and white for the lard (made from the cheek), which must be evenly distributed;- Aroma: unmistakable and fragrant, but not overly intense;- Consistency of the slice: compact and crumbly.- Taste: velvety and balanced.
